USAmericans who live in Mexico would appreciate not being called "gringos" by "canooks." The term is disparaging and if anyone is entitled to use it, it would be Mexicans, who do not.

And a minor point - the Chili Cookoff is not held in Ajijic, but in San Antonio Tlayacapan.

We do like our Canadian neighbours and visitors, but please respect US as well.
